So Jam’s a skunk. :) I’d been wondering about that for a while now. I can see it now that I look at her. :) She’s certainly a cute skunk, that’s for sure^_^
Sorry, but them being skunks was sorta retconned years and years and years ago!
I think it was the description of “I </3 U 2" or the one with Left and Right Bunny, where it clearly says that Jam is a skunk. Classic layout; check it out yourselves if you can. Peach's a squirrel and so on. Though we'd all be better off if you could confirm this! :)

No, Miu said that he’d retconned them from being skunks, squirrels and such. I believe that they are non-specific; as in this website’s description, he mentions them as “girls”.

Considering that the biosphere in their world is obviously different from ours in some important respects, I would not really be surprised to find out that they are species we don’t have any direct equivalent of, and thus don’t have any useful names for.
Additionally, (I don’t recall if this has been addressed before, but) if they’re all biologically compatible (meaning they don’t have to find a mate of their own type to produce offspring), and especially if this has been more or less accepted practice for a while, I would expect that pretty much nobody would be completely “pure” anymore, and instead just about everyone would have at least a little bit of mixed blood in them. Maybe only several generations back, but still – it would make the matter far less clear-cut and obvious. (Though they might have come up with new names for some such combinations, if common enough…)
